How it actually works
The chef's last 45 minutes every night is tomorrow's prep list on notebook paper. Tell your assistant what tomorrow looks like: expected business, anything on special, whatever is running low, and the prep list comes back organized by your stations, quantities filled in where your pars say so, blanks where a judgment call belongs. Review it, say it is good, and it is filed and emailed, ready to print for the pass.
